Ron Blaauw recipe #5: Lamb shoulder with tomato salad

The lamb shoulder is an undervalued piece of meat but great to fry. The shoulder has a lot more work to do then the larynx muscle (the bolt), and therefore needs to be slowly cooked. Our chef serves the dish with a tomato salad and fresh herbes and Bosch & Dal wine.
