Apple pie by BBQ Junkie

This delicious apple cake, which has both apple in the batter and on top of the cake, is recommended to bake on your BBQ.

Ingredients

  • 3 Elstar apples
  • 250 grams of self-raising flour
  • 225 grams Butter (at room temperature)
  • 125 grams of sugar
  • 100 grams of yogurt
  • 3 eggs
  • 2 teaspoons Vanilla Extract
  • 1 tablespoon of powdered sugar
  • 1.5 tsp Cinnamon
  • BBQ with Lid
  • Cake tin 25 cm
  • Baking paper
  • Mixer with mixing bowl
  • Additional Mixing Bowl
  • Spatula
  • BBQ Gloves

Prepare

Light the BBQ and go for indirect heat and a temperature of about 170 degrees. Also grease the cake tin and cover the tin with baking paper.
Peel the apples and cut them into wedges. Then cut 2.5 apples into cubes and put them in a bowl with the icing sugar and stir. Slice the remaining 2 apple wedges and set aside.

Now put the butter with the sugar in the bowl of the mixer and beat it airy. Then add the eggs one by one. Do not add the next egg until the previous egg is completely incorporated.

Then mix the vanilla extract with the mixture of butter, sugar and eggs. Then fold the flour, yogurt and 1 teaspoon of cinnamon into the mixture.
Finally, fold the apple cubes into the batter and then pour the batter into the cake tin. Now cover the top of the cake with the apple slices you have left over and sprinkle the remaining cinnamon on top.

Is the BBQ up to temperature? Then place the cake tin on the grid and close the BBQ with the lid. Then bake the cake for about 60 minutes, until the apple cake is golden brown and cooked through. Check the latter if necessary with a skewer. Does it come out clean when you poke it in? Then the cake is ready.

Remove the apple cake from the BBQ and remove it immediately from the mold. Let cool on a cake rack and then cut the cake into slices.
